I've been wanting this for a long time, but didn't know it exists already! For whatever reason I could never find it when I tried searching for recovery boot for newer OS.
I figure, I may not be the only one who can't find it and needs to know the different boot options for recovery.
Here is the Support Doc shows it as well.
And attached is a quick cheat sheet from the support doc.
Command (⌘)-R
Install the latest macOS that was installed on your Mac.
Option-⌘-R
Upgrade to the latest macOS that is compatible with your Mac.
Shift-Option-⌘-R
Install the macOS that came with your Mac, or the closest version still available.
