Lion profiles in Casper: a couple of newbie questions

Hello everyone,
I am testing Lion Configuration Profiles with Casper and would like to ask you:
- is there a way/key local admin users can temporarily override (bypass) profiles enforced at computer level (as in Workgroup Manager) ?
- I tried deleting the profiles (including the main MDM) from a test client and now I can't find a way to enroll it anymore. The client is still present within Profiles "scope".
Aren't profiles supposed to be permanently loaded if assigned?

Here's how I get around the profiles on a machine temporarily.

In a profile that is delivered, I check the box under General->Login Window->Options for Computer administrators may refresh or disable management.

Then, when I login as a local administrator, I hold down the option key and a window pops up asking me what I want to do with the managed preferences.
